Panzanella Salad is one of my favorite summer salads!
According to Wikipedia it is “a Tuscan chopped salad of soaked stale bread, onions and tomatoes that is popular in the summer. It often includes cucumbers, sometimes basil and is dressed with olive oil and vinegar.”
I made mine with two kinds of tomatoes, a pattypan squash, spring onions, purple peas, capers, and a TON of basil. I toasted some little ciabatta croutons using roasted garlic ciabatta bread and a dressing of lemon juice, stone ground mustard, olive oil, salt & pepper.
This is 8 portions so I’m counting 6 WW Points for my portion, and 3 Points for some grilled bbq shrimp.
